Sausage, Bean Soup - cooking recipe

Ingredients
    1 lb. Great Northern beans, dried
    1 large onion, chopped
    1 tsp. garlic salt
    3 lb. smoked sausage, cut in 1/4 inch slices
    2 large potatoes, diced
    3/4 lb. grated carrots
    1 (5 oz.) pimento, drained and chopped fine
    1 (8 oz.) can tomato sauce
    2 c. water
    dash of Mrs. Dash
Preparation
    Wash beans.
    Cover with water and soak overnight.
    Drain beans and place in 2 1/2 gallon large heavy pot.
    Add onion and garlic salt.
    Cover with water and bring to a boil.
    Reduce heat, cover and simmer 1 hour.
    Stir in remaining ingredients and simmer 1 1/2 additional hours, stirring occasionally.
    The lower the temperature you can cook the beans and still simmer, the better.
    Serves 12 to 15 folks.
