Lemon Dill Rice(Heart Healthy) - cooking recipe

7 oz. white vegetable stock
3 1/2 oz. white wine (dry)
1 oz. onion, small dice
1 bay leaf
1/4 oz. lemon juice, freshly squeezed
1/4 tsp. lemon zest
6 oz. rice (long grain)
2 tsp. dill (fresh), chopped
Preparation

Combine the stock, wine, onion, bay leaf, lemon juice and zest and bring it to a boil. Add the rice to the boiling stock and stir once with a fork to separate the grains. Cover the pot and place it in a moderate oven (350\u00b0F/175\u00b0C) for approximately 25 to 30 minutes or until the rice has absorbed all of the liquid. Remove the cover; fluff the rice with a fork and fold in the chopped dill. Re-cover and allow to rest 5 to 10 minutes before serving. Yield: 4 portions.
