Veggie Pancakes - cooking recipe

Ingredients
    1 (6 oz.) pkg. self-rising white cornmeal mix
    1 (11 oz.) can whole kernel corn, drained
    1/2 large red bell pepper diced (can use green)
    1/2 c. all purpose flour
    1 green onion
    1 large carrot, shredded
    2/3 c. buttermilk
    1 large egg, lightly beaten
    1/2 tsp. dried crushed red pepper
    1/4 c. vegetable oil
Preparation
    Stir ingredients together. Heat 2 tablespoons oil in skillet. Dip by 1/3 cup at a time in hot oil and cook until golden brown. Top with salsa and sour cream.
