Welsh Braised Leeks - cooking recipe

Ingredients
    12 leeks
    1 small onion, chopped
    1 Tbsp. butter
    1 c. good stock
    slices of buttered toast
Preparation
    Melt butter in a wide, shallow saucepan, add the chopped onion and saute until it is pale gold and softened.
    Trim and wash the leeks thoroughly; add them to saucepan.
    Pour in a cup of good stock and simmer, covered, until leeks are just tender.
    Serve on slices of buttered toast.
    Serves 4.
