Herbed Roast Pork Loin - cooking recipe

Ingredients
    1 (2 to 3 lb.) pork loin roast
    1/8 tsp. crushed dried garlic
    2 Tbsp. olive oil
    1/2 tsp. ground thyme
    1 Tbsp. dried rosemary
    1/2 tsp. salt
    1/4 tsp. pepper
Preparation
    Rub roast with olive oil.
    Sprinkle with herbs, salt and pepper.
    Refrigerate overnight.
    Place roast on a rack in a shallow pan.
    Insert meat thermometer in thickest part of meat, not touching bone or fat.
    Place in 350\u00b0 oven and cook until meat thermometer registers 160\u00b0 to 170\u00b0.
    Let rest 15 minutes before slicing.
    Use drippings to make a thin gravy if desired.
