Black-Eyed Peas - cooking recipe
Ingredients

1 lb. black-eyed peas
1 onion, chopped
1 carrot, chopped
1/2 tsp. basil
2 garlic cloves
1/2 tsp. oregano
1 ham bone
2 celery stalks, chopped
1 whole bay leaf
1 tsp. peppercorn
1/2 tsp. salt
1 tsp. Cajun seasoning
Preparation

Combine all ingredients in large soup kettle with
3 quarts water.
Bring to a boil and simmer, uncovered, for two hours or until black-eyed peas are tender.
Drain; remove whole bay leaves, garlic, peppercorns and ham bone.
Remove ham from bone; chop and add back to beans.
Serve hot.
Serves 8.
