Lighter Muffins - cooking recipe
Ingredients

1 c. buttermilk
1/4 c. liquid egg substitute
2 Tbsp. canola oil
1 c. flour
1 c. whole wheat flour
1/4 c. sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
Preparation

Heat oven to 400\u00b0.
Spray muffin cups with vegetable coating. Combine egg substitute, oil and buttermilk.
In separate bowl, combine flours, sugar, baking powder, soda and salt.
Add to liquid ingredients and mix just until combined.
Fill muffin cups 2/3 full.
Bake for 18 to 20 minutes.
Serve hot.
