Calm Cucumbers - cooking recipe

Ingredients
    4 cucumbers, pared
    1 sweet Spanish onion, sliced
    1 c. sugar
    1 c. water
    1/2 c. vinegar
    1/2 c. oil
    celery seed
Preparation
    Score cucumbers lengthwise with tines of fork.
    Slice thinly and put in salted ice water with onion.
    Let stand 1 to 2 hours. Cook sugar and water over low heat until sugar is dissolved. Cool.
    Add vinegar and oil and mix well.
    Drain cucumbers and onion.
    Pour vinegar and oil mixture over them.
    Cover and refrigerate overnight.
    Sprinkle with celery seed before serving. Good with beans.
    Yields 8 servings.
