Cheesy Potato Supreme - cooking recipe

Ingredients
    7 to 8 medium potatoes, peeled
    1/4 c. margarine or butter
    1 small onion, chopped
    1 tsp. salt
    1/4 tsp. pepper
    8 oz. carton sour cream
    2 c. Cheddar cheese, shredded
    1 can cream of chicken soup
    3 Tbsp. margarine, melted
    1 1/2 c. herb-seasoned stuffing mix
Preparation
    Cook potatoes until tender; cut into 1/4-inch strips.
    Combine 1/4 cup margarine, onion, salt, pepper, sour cream and soup. Gently stir into potatoes.
    Add shredded cheese.
    Spoon into lightly greased 9 x 13-inch baking dish.
