Fish And Rice - cooking recipe

Ingredients
    1/4 c. chopped onion
    4 to 5 Tbsp. butter
    2 c. cooked rice
    2 Tbsp. lemon juice
    1 slightly beaten egg
    salt and pepper
    1 lb. frozen fish fillets, partially thawed
Preparation
    Cook onion in 2 tablespoons butter until slightly tender; stir into rice.
    Mix in lemon juice, egg and a dash of salt.
    Place half of the fillets in a buttered baking dish; season with salt and pepper.
    Top with rice mixture, then remaining fillets.
    Brush with remaining butter. Sprinkle with salt and pepper.
    Bake at 375\u00b0 for about 35 minutes.
