Pepperoni Zucchini Casserole - cooking recipe
Ingredients

4 c. zucchini, peeled, chopped and seeded
1/2 c. onion, chopped
2 c. Mozzarella cheese, shredded
2 Tbsp. Parmesan cheese, grated
1 c. pepperoni, small chunks
1/4 c. oil
4 eggs
1 c. Bisquick
salt, pepper, oregano and basil to taste
Preparation

Spray a 13 x 9-inch baking dish with cooking spray.
Preheat oven to 350\u00b0.
In a large bowl, combine zucchini, onion, cheeses, pepperoni and spices.
Mix thoroughly.
In another bowl combine oil, eggs and Bisquick.
Mix well.
Add to the zucchini mixture and blend thoroughly.
Spread mixture in a baking dish.
Bake 35 to 45 minutes or until cheese starts browning.
