Coconut Cream Pies - cooking recipe
Ingredients

5 eggs, separated (beat yolks well)
1 1/2 c. sugar
4 Tbsp. cornstarch
1 c. evaporated milk
2 c. water
1 tsp. vanilla
1/2-3/4 c. fresh frozen coconut
2 pie shells
Preparation

Mix sugar and cornstarch well.
Mix the 2 cups evaporated milk with 2 cups of water and 1 teaspoon vanilla.
Then add the well-beaten egg yolks.
Stir well and add to the sugar and cornstarch mixture and heat over medium heat, stirring constantly until thick.
Add the coconut and pour into 2 lightly browned pie shells.
