Rotel Potatoes - cooking recipe

Ingredients
    6 to 8 baking potatoes
    1 can Ro-Tel tomatoes
    1 lb. Velveeta cheese
    1/2 green bell pepper, chopped
    1/2 medium onion, chopped
Preparation
    Bake potatoes until done.
    Allow to cool, then cut into bite-size pieces.
    (Skin may be removed or left on.)
    Cover bottom of large baking dish with potatoes.
    Cook bell pepper and onion until tender.
    Melt cheese; add tomatoes, cooked peppers and onions.
    Pour over potatoes.
    Cook at 350\u00b0 for 15 to 20 minutes.
