Catfish Creole The Southern Way - cooking recipe
Ingredients

1/4 c. oil
2 Tbsp. all-purpose flour
1 (24 oz.) jar picante sauce
1 tsp. salt
1/4 tsp. black pepper
1 tsp. sugar
1 Tbsp. Worcestershire sauce
1 1/2 lb. catfish
1 Tbsp. Tabasco sauce
cooked rice (for serving)
Preparation

Boil catfish for 15 minutes.
Debone and chip up.
Set aside. Heat the oil in a large saucepan over medium high heat.
Stir in flour to form a thin paste.
Continue cooking, stirring occasionally, until caramel colored.
Add picante sauce to the flour mixture.
Then season with salt, pepper, sugar, Worcestershire sauce and Tabasco.
Simmer 10 minutes, then add catfish and simmer 30 minutes.
Serve over rice.
