Red Beans And Rice - cooking recipe

Ingredients
    1 lb. red kidney beans
    1/2 lb. ham or meat seasoning
    8 c. water
    1 onion, chopped
    1 clove garlic, chopped
    2 Tbsp. celery, chopped
    2 Tbsp. parsley, chopped
    1 large bay leaf
    salt to taste
    pepper to taste
    rice, cooked
Preparation
    Rinse and sort beans.
    Render meat in skillet.
    Remove meat and place on side.
    Saute in fat in skillet, onion, garlic, parsley and celery.
    Add these with salt and pepper to beans. Cook over low heat for 1 1/2 hours.
    To make creamy, cook for 3 to 4 hours.
    Serve over rice.
