Lemon Rice Chicken Orient - cooking recipe

Ingredients
    1 whole chicken, cut up
    2 Tbsp. peanut oil
    1 Tbsp. butter
    1 1/2 c. rice
    1 (7 oz.) can water chestnuts
    1 bunch green onions, chopped
    1 tsp. ginger
    1 1/4 tsp. ground pepper
    2 garlic cloves
    1 tsp. lemon rind
    14 1/2 oz. chicken broth
    1/4 c. lemon juice
    2 Tbsp. soy sauce
Preparation
    Brown chicken in peanut oil and butter; remove.
    Set aside.
    To oil add rice, water chestnuts, green onions, ginger, garlic, lemon rind and spices.
    Cook, stirring 1 minute.
    Add chicken broth, lemon juice and soy sauce; bring to boil.
    Arrange chicken on top. Bake at 375\u00b0 for 30 minutes (until liquid is absorbed).
