Corned Beef Casserole - cooking recipe

5 Tbsp. peanut or vegetable oil
2 c. chopped cooked potatoes
1 c. finely chopped green pepper
3/4 c. finely chopped onion
2 cloves garlic, crushed
2 c. chopped cooked corned beef
1/2 tsp. dry mustard
1/2 c. yogurt or sour cream
1/2 c. shredded sharp Cheddar cheese
1/2 c. fine dry bread crumbs
1/2 tsp. salt
1/2 tsp. pepper
Preparation

Heat 4 tablespoons oil in large skillet over high heat.
Add potatoes, green pepper, onion and garlic.
Quickly cook until potatoes are lightly brown, turning mixture frequently.
Remove from heat.
Stir in corned beef, mustard, salt, pepper and yogurt. Pour into a 1-quart casserole dish.
Combine cheese, bread crumbs and remaining 1 tablespoon of oil in small bowl.
Toss until well mixed.
Sprinkle evenly over corned beef mixture.
Bake at 375\u00b0 for about 30 minutes or until browned and bubbling.
Serves 4.
