Pickle Beets - cooking recipe

Ingredients
    2 c. strong vinegar
    2 c. water
    2 c. sugar
    1 tbsp cinnamon
    1 tbsp allspice
    1 thinly slice lemon
Preparation
    Pour over beets and let simmer 15 minutes.
    Not quite enough vinegar for 4 quarts 3 times the amount is enough for 10 quarts.
