Peanut Crunchies(Croccanti) - cooking recipe
Ingredients

2 egg whites
1 tsp. baking powder
3 c. flour, sifted
3 c. sugar
3 Tbsp. melted shortening
1 lb. shelled and unsalted peanuts
2 tsp. lemon flavor extract
Preparation

Mix sugar, flour, baking powder and peanuts in large bowl.
Add melted shortening and extract.
Fold in egg whites, beaten stiff. Add small amount of water to moisten dough to hold together.
(If too soft, add a little more flour.)
Cut or spoon about 1 1/2 inches long and 1/2 inch wide.
Place on greased pans about one inch apart.
Bake at 350\u00b0 until light brown, 12 to 15 minutes. Take off pan while hot.
