Carrot Pineapple Loaf - cooking recipe
Ingredients

3 c. flour
1 1/2 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. salt
3/4 c. sugar
1 c. polyunsaturated oil
1 c. grated carrots
1 can crushed pineapple, undrained (13 1/2 oz.)
2 tsp. vanilla
2 eggs plus 2 additional egg whites, slightly beaten together
Preparation

Sift together flour, cinnamon, baking soda and salt.
Mix sugar and oil.
Add carrots, pineapple, vanilla and eggs plus egg whites. Mix well.
Pour into 2 greased 8 1/2 x 4 1/2 x 2-inch loaf pans. Bake at 325\u00b0 for 50 to 60 minutes.
