Raisin-Carrot Muffins - cooking recipe
Ingredients

2 c. flour
1 c. sugar
2 tsp. baking powder
1/2 tsp. cinnamon
1/4 tsp. ginger
1/2 c. shredded carrots
1/2 c. raisins
1/2 c. chopped walnuts
1 (8 oz.) can crushed pineapple with juice
2 eggs, beaten
1/2 c. butter, melted
1 tsp. vanilla
Preparation

Beat eggs until frothy; add dry ingredients and blend.
Fold in the carrots, raisins, walnuts and pineapple.
Pour into prepared muffin cups.
Bake 20 to 25 minutes at 375\u00b0.
Makes 1 dozen.
