Ingredients

1 stick butter
2 c. sugar
3 eggs
3/4 c. buttermilk
1/2 tsp. vanilla
2 c. coconut
9-inch pie crust shells (unbaked)
Preparation

Mix first 6 ingredients in a large mixing bowl.
Pour into crust.
Bake for 1 hour at 325\u00b0 to 350\u00b0, or until golden brown.
