Chicken Garden Skillet - cooking recipe

Ingredients
    1/4 c. shortening
    seasoned flour
    3/4 c. cooking sherry
    1 medium red onion
    1 (9 oz.) pkg. frozen artichoke hearts or fresh broccoli
    1 chicken, cut up
    3/4 c. chicken broth
    2 tomatoes, cut in wedges
    1/2 green pepper, sliced
Preparation
    In electric skillet, melt shortening. Meanwhile, dredge chicken pieces in seasoned flour. Brown slowly in the hot shortening about 10 minutes, turning once.
    Reduce heat.
    Add chicken broth and sherry. Cover and cook for 45 minutes.
    Add vegetables. Cover and cook until vegetables are tender, about 15 minutes.
    Makes 4 to 5 servings.
