Quick Apple Pie - cooking recipe

8 c. tart fresh apples, pared and sliced
1 c. brown sugar
1/2 tsp. cinnamon
1/8 tsp. salt
2 Tbsp. flour
1 Tbsp. lemon juice (optional)
1 tsp. grated lemon rind (optional)
2 Tbsp. margarine or butter
pastry for double crust pie
Preparation

Combine sugar, cinnamon, flour, salt and lemon rind in saucepan.
Add apples, margarine and lemon juice; cook over low heat until apples are partly done.
Spoon apple mixture into unbaked pie shell.
Cover with top crust.
Bake at 450\u00b0 for 20 to 30 minutes.
