Mexican Cornbread - cooking recipe

Ingredients
    2 eggs
    2/3 c. vegetable oil
    1 c. sour cream
    1 1/2 c. self-rising cornmeal
    2 Tbsp. chopped green pepper
    2 Tbsp. chopped onion
    2 Tbsp. chopped pimentos
    4 oz. chopped green chilies, drained
    6 oz. shredded Cheddar
Preparation
    In a mixing bowl, combine eggs, oil and sour cream. Stir in cornmeal, green pepper, onion, pimento and chilies. Mix well. Pour half of cornmeal mixture into a greased 12 x 8 x 2-inch baking dish. Top with beef. Sprinkle with 1/2 cup Cheddar cheese. Spoon remaining cornmeal mixture over cheese. Sprinkle with remaining cheese. Bake at 350\u00b0 for 30 minutes or until bread is done. Serves 10.
