Cheesy Cauliflower Casserole - cooking recipe

Ingredients
    3 c. cauliflowerets
    1 (2 oz.) jar pimento
    2 Tbsp. chopped green pepper
    1 (8 oz.) can water chestnuts, sliced
    2 eggs, hard-boiled, chopped
    1 small onion, chopped
    1 c. grated Cheddar cheese
    2 Tbsp. flour
    1/2 tsp. salt
    1/4 tsp. pepper
    4 Tbsp. melted butter
    2 c. half and half
    1 c. processed cheese, cubed
    2 c. crushed cheese crackers
    3 Tbsp. grated Parmesan cheese
Preparation
    Layer first 7 ingredients in 2-quart casserole in order listed. Blend flour, salt, pepper and butter in saucepan.
    Cook for 1 minute, stirring constantly.
    Add half and half and processed cheese, stirring until smooth.
    Pour over vegetables and bake at 350\u00b0 for 1/2 hour.
    Top with cracker crumbs and Parmesan cheese and bake for 3 minutes longer.
    Yields 12 servings.
