Cheesy Mashed Potatoes - cooking recipe
Ingredients

4 medium potatoes, baked
1/3 cup butter or oleo
2 (3 oz.) pkg. cream cheese
1/2 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
1 medium finely chopped green pepper
4 diced green onions
salt and pepper
1 slice toasted buttered bread
Preparation

Peel potatoes, whip.
Add milk.
Soften butter and cream cheese in microwave on high 45 seconds.
Whip into potatoes with cheddar cheese and parmesan cheese, green pepper, green onion, salt and pepper to taste.
Pour into 2 quart casserole dish. Crumble toast and sprinkle on top.
Microwave on HIGH 10 to 12 minutes, rotating 1/4 turn halfway through cooking.
Rest, covered, 5 minutes.
Serves 8 to 10.
