Chicken Luau - cooking recipe

Ingredients
    2 whole medium chicken breasts
    1 (8 oz.) can pineapple chunks in pineapple juice
    1 c. water
    1 medium green or red pepper, cut in 1-inch strips
    1/2 c. uncooked regular long grain rice
    2 Tbsp. soy sauce
Preparation
    Remove skin, excess fat and bones from chicken breasts; cut meat into bite size pieces.
    In large bowl, combine chicken pieces, pineapple chunks and juice and next 4 ingredients.
    Heat in preheated 450\u00b0 oven for about 45 minutes or until chicken is fork-tender and mixture is heated through.
