Batter For Deep Frying(To Coat 12 To 15 Fish Pieces) - cooking recipe

Ingredients
    1 c. flour
    salt and pepper to taste
    1 Tbsp. olive oil
    1 can beer, water or milk
    2 egg whites
Preparation
    Sift flour into bowl and season with salt and pepper.
    Make well in center.
    Add the oil and gradually whisk in liquid, working from center outward.
    (Whisk until batter is smooth; don't overwork.)
    Let batter set about 1 hour at room temperature.
    Beat egg whites to form soft peaks and fold gently into the batter just before using.
    Consistency of batter may be varied by more or less liquid added.
    Thin batter will cook crisper and lighter but some may be lost in oil during cooking.
    Thicker batter clings better but tends to be breaky.
