Roasted Red Pepper Spread - cooking recipe

Ingredients
    2 (7 oz.) jars roasted red peppers
    2 Tbsp. olive oil
    2 Tbsp. chopped parsley
    1 Tbsp. lemon juice
    2 tsp. drained capers
    1 medium clove garlic, peeled and finely chopped
    salt to taste
Preparation
    Drain and rinse roasted red peppers.
    Pat dry with paper towels.
    Put remaining six (6) ingredients in blender and whirl until capers and parsley are finely chopped.
    Add peppers.
    Pulse with on/off motion until peppers are coarsely chopped.
    Serve with crackers or Italian bread.
