Pork Tenderloin With Onion-Apple Cream - cooking recipe

Ingredients
    3/4 to 1 lb. pork tenderloin
    6 Tbsp. whipping cream
    2 Tbsp. cream sherry
    1 tsp. Dijon mustard
    1/2 tsp. prepared horseradish
    2 Tbsp. butter or margarine
    1 large onion, thinly sliced
    1 small Golden Delicious apple, thinly sliced
    salt and pepper
Preparation
    Place pork on a rack in a shallow roasting pan.
    In a small bowl, stir together whipping cream, sherry, mustard and horseradish.
    Brush half of mixture over pork.
    Roast, uncovered, in a 325\u00b0 oven, brushing often with cream mixture, for 45 to 60 minutes or until pork meat in center is not longer pink when slashed.
