Orzo Provencal(Makes 4 Servings) - cooking recipe
Ingredients

1 c. shredded zucchini
1 medium tomato, diced
1/2 c. red onion, diced
2 Tbsp. chopped, fresh, flat leaf parsley
2 Tbsp. lemon juice
4 tsp. olive oil (1 Tbsp. and 1 tsp.)
2 cloves garlic, minced
2 Tbsp. chopped fresh mint
dash of pepper
5 to 6 oz. orzo (rice-shaped pasta), cooked according to pkg. directions
Preparation

In a medium bowl, place all ingredients except orzo and toss to combine.
Add orzo; stir to combine.
