Cio Clare - cooking recipe
Ingredients

1 1/2 to 2 lb. linguine
1/4 lb. Prosciutto, chopped
3 Tbsp. peas
6 c. whipping cream
3/4 c. beef stock
3/4 c. chicken stock
1 medium size onion, chopped
5 cloves garlic, diced
4 Tbsp. parsley, chopped
6 medium tomatoes, seeded and chopped
3 Tbsp. oil
5 Tbsp. butter
1/3 to 1/2 c. Parmesan cheese
Preparation

In large skillet or saucepan, heat oil and butter.
Add onion and garlic.
Allow to melt and turn translucent.
Add the Prosciutto; saute gently 2 minutes.
Add chopped tomatoes and cook 5 minutes or until oil separates from vegetables.
Add beef and chicken stock, chopped parsley and peas.
Cook 2 minutes.
Add whipping cream.
Cook another 5 minutes.
Thicken with 2 tablespoons flour mixed with water to form a paste.
Serve over linguine.
Add 1/3 to 1/2 cup Parmesan cheese while mixing.
