Deep Dish Peach Pie - cooking recipe
Ingredients

8 medium peaches, peeled and thinly sliced
3/4 c. sugar
1/4 c. brandy
confectioners sugar
pastry (in 2 parts), thinly rolled
Preparation

Roll pastry to cover sides and bottom of a 3-inch deep quart casserole.
Put peaches in. Add sugar and brandy.
Cover with pastry; slash.
Bake at 450\u00b0 for 10 minutes; reduce to 350\u00b0. Dredge with confectioners sugar and bake 5 minutes more.
Yields 6 servings.
