Texas Meat Loaf - cooking recipe
Ingredients

1 c. finely chopped onion
1 red pepper, diced
1 Tbsp. chili powder
1 tsp. cumin
1/4 tsp. ground red pepper
1 tsp. minced garlic
1 1/2 lb. ground beef, turkey breast or chicken
2 c. fresh bread crumbs
1 c. canned or frozen, thawed corn kernels
1/3 c. plus 2 Tbsp. ketchup
1/3 c. low-fat milk
1 large egg plus 1 large egg white
1 tsp. salt
1/2 tsp. pepper
Preparation

Preheat oven to 350\u00b0.
Heat oil in medium nonstick skillet over medium heat.
Add onions and red peppers.
Cook, stirring occasionally, until tender, 5 to 10 minutes.
Stir in chili powder, cumin, ground red pepper and garlic.
Cook 20 seconds more. Transfer to large bowl and cool.
