Stuffed Zucchini - cooking recipe

Ingredients
    3 medium zucchini
    2 Tbsp. margarine
    1 clove garlic, minced
    1/2 c. onion, chopped
    1/4 c. parsley, chopped
    2 Tbsp. flour
    1/4 tsp. oregano
    1 c. Monterey Jack cheese, shredded
    2 Tbsp. pimento, chopped
    1/4 c. freshly grated Parmesan
Preparation
    Cook whole zucchini in boiling salted water about 10 minutes or until tender.
    Drain well.
    Cut in half lengthwise.
    Scoop out centers leaving 1/4-inch thick shell.
    Chop zucchini meat.
    Saute garlic, onions and parsley in margarine in large skillet.
    Add mushrooms; cook until tender.
    Stir in flour and oregano.
    Stir in shredded cheese, pimento and chopped zucchini.
    Heat through.
