Grilled Eggplant Salad - cooking recipe

Ingredients
    1 eggplant
    1 Vidalia onion
    2 summer tomatoes
    Feta cheese
    olive oil
    balsamic vinegar
Preparation
    Slice eggplant lengthwise about 1/4-inch thick (skin optional).
    Brush with olive oil.
    Brown on gas grill both sides about 5 minutes each side.
    Put on serving platter and cover with thinly sliced Vidalia onions.
    Next layer with thinly sliced tomatoes.
    Crumble Feta cheese generously on top.
    Sprinkle balsamic vinegar on top.
    Serve immediately.
