Stuffed Pork Chops Ol - cooking recipe

Ingredients
    6 to 8 rib pork chops, cut 1 1/2 inch thick with pockets for stuffing
    1/2 cup cooked rice
    1 cup (4 oz.) shredded Cheddar cheese
    1/4 cup coarsely chopped pecans
    1/4 cup chopped green pepper
    1/4 cup chopped celery
    1/2 tsp. thyme
    2 Tbsp. lard or drippings
    1 tsp. salt
    1/4 tsp. pepper
Preparation
    Combine cooked rice, cheese, pecans, green pepper, celery, and thyme.
    Fill each pocket with 1/4 to 1/3 cup of stuffing. Lightly brown chops in lard or drippings.
    Sprinkle chops with salt and pepper, place on rack in roasting pan and cover securely with foil.
    Bake in a moderate oven (350 degrees) for 30 minutes. Uncover and continue baking for 30 minutes longer or until meat is done.
