Banana-Nut Cake - cooking recipe

Ingredients
    2 1/2 c. cake flour (2 c. plus 3 Tbsp. if using regular flour)
    1 1/2 c. sugar
    1 1/4 tsp. baking powder
    1 1/4 tsp. soda
    1 tsp. salt
    2/3 c. soft shortening
    2/3 c. buttermilk
    1 1/4 c. mashed ripe bananas (about 3)
    3 eggs (1/2 to 2/3 c.)
    1/2 c. finely chopped nuts (I use English walnuts)
Preparation
    Heat oven to 350\u00b0.
    Grease and flour one 13 x 9 1/2 x 2-inch pan or two 9 x 1 1/2-inch layer pans.
    Blend flour, sugar, baking powder, soda and salt in a large mixing bowl.
    Add shortening, half of buttermilk and mashed bananas.
    Beat 2 minutes on medium speed of mixer.
    Scrape sides and bottom of bowl constantly.
    Add eggs and rest of buttermilk.
    Beat 2 more minutes, scraping bowl frequently.
    Fold in nuts.
    Pour into prepared pans.
    Bake oblong 45 to 50 minutes and layers about 35 minutes.
