Fried Catfish - cooking recipe
Ingredients

2 lb. catfish
2 tsp. salt
1/4 tsp. pepper
2 eggs, beaten
3 tsp. milk
1 1/2 c. cornmeal
vegetable oil or shortening
Preparation

Season fish with salt and pepper.
Combine eggs and milk.
Dip fish into egg mixture, then roll in cornmeal to coat.
Pour oil into frying pan, filling to the halfway point; heat to 375\u00b0.
Fry fillets for 8 minutes or until first side is golden brown, then turn and cook 8 more minutes until fish flakes easily with fork. Drain fillets on paper towels and serve.
Serves 4 to 6.
