Cream Of Broccoli Soup - cooking recipe

Ingredients
    1 1/2 lb. fresh broccoli
    5 c. chicken broth or stock
    1/4 c. butter or margarine
    1 small onion, chopped
    3 celery ribs, chopped
    1/4 c. flour
    2 c. milk or half and half, scalded
    1/4 tsp. nutmeg
    salt
    paprika
    Parmesan cheese
Preparation
    Wash broccoli and cut off flowerets.
    Set flowerets aside. Peel stems and chop coarsely.
    Place chopped stems in a large saucepan and cover with chicken broth.
    Bring to a boil and simmer 1/2 hour.
    Drain, reserving stock.
    Put broccoli stems through blender with 1 cup stock.
    Set puree aside.
