Barley And Corn Salad With Jalapeno And Lime Dressing - cooking recipe

Ingredients
    3 c. water
    1 c. pearl barley, uncooked
    1 Tbsp. minced jalapeno pepper
    1/4 c. fresh lime juice
    2 Tbsp. vegetable oil
    1/2 tsp. salt
    1/8 tsp. pepper
    1 c. corn, cut from cob
    1/2 c. peeled, seeded and diced cucumber
    1/2 c. diced tomato
    1/2 c. diced green pepper
    1/2 c. finely chopped purple onion
Preparation
    Bring water to a boil in a medium saucepan.
    Gradually stir in barley.
    Cover, reduce heat and simmer 40 minutes or until barley is tender and water is absorbed.
    Let cool.
