2 lb. tenderloin of pork
Preparation

Preheat oven to 400\u00b0.
Heat oil in cast-iron skillet.
When sizzling, add the tenderloins and brown on all sides.
Place in the oven and roast for about 20 to 30 minutes.
This tastes good with buttermilk biscuits and gravy.
