Roast-Beef Salad(Serve This Main Dish Salad With Crusty Bread.) - cooking recipe

Ingredients
    4 c. coarsely shredded romaine lettuce
    8 oz. sliced, cooked roast beef, cut in thin strips
    1 c. corn kernels (fresh, frozen or drained canned)
    1/2 c. sliced scallions
    1/3 c. bottled reduced calorie white wine vinaigrette or Italian dressing
    freshly ground pepper
    2 medium size tomatoes (6 oz. each), cut in thin wedges
    1 medium size cucumber, sliced
Preparation
    Put lettuce, beef, corn and scallions on a serving platter. Sprinkle with dressing and pepper.
    Carefully toss to mix and coat.
    Surround with tomatoes and cucumber.
    Serve more dressing alongside, if desired.
