Zucchini Casserole - cooking recipe

Ingredients
    6 c. unskinned zucchini, cut in small cubes
    1 medium onion, diced
    1 to 2 large carrots, shredded
    1 c. sour cream
    1 can cream of chicken soup
    1 box chicken Stove Top stuffing
    1 stick butter, melted
Preparation
    Prepare zucchini, onion and carrot.
    Boil in pan until just tender, about 10 to 15 minutes.
    Combine sour cream and soup. Mix well; set aside.
    In another bowl, put complete contents of stuffing mix and add melted butter.
    Mix together well.
    Set 1/4 to 1/2 cup aside to sprinkle on top.
    When vegetables are tender, drain.
    Put all ingredients, except topping, in a large bowl. Mix together with a spoon.
    Pour in greased casserole dish. Sprinkle with reserved stuffing mix.
    Bake at 350\u00b0, uncovered, for 30 to 40 minutes.
