Ingredients

1 c. granulated sugar
3/4 c. cider vinegar
1/2 c. apple juice
1 Tbsp. lemon juice
1 c. chopped celery
1/4 c. dried apricots, chopped
2 Tbsp. ginger root, peeled and chopped
1/4 tsp. crushed pepper
3 medium baking apples, cored, peeled and cut into 1/2-inch pieces
Preparation

In a 2-quart saucepan, combine all ingredients, except apples. Bring to a boil.
Reduce heat and simmer 15 to 20 minutes.
Add apples and simmer 15 to 20 minutes more or until most of the liquid is evaporated and sauce coats the back of a spoon.
Cool thoroughly.
Makes 1 1/2 cups.
Use this over fish or poultry.
