Ingredients

2 (3 oz.) pkg. apricot Jell-O
2/3 c. sugar
2/3 c. water
2 small jars apricot baby food (with tapioca)
1 (20 oz.) can crushed pineapple, undrained
1 can Eagle Brand sweetened condensed milk, chilled
1 (8 oz.) pkg. cream cheese, softened
3 Tbsp. lemon juice
1 1/2 c. chopped pecans or walnuts
Preparation

Mix sugar and water in saucepan and bring to a boil.
Add gelatin and stir until completely dissolved.
Add fruit (pineapple and baby food) and set aside to cool. Beat cream cheese until smooth.
Add condensed milk and lemon juice; continue beating until smooth. Stir in gelatin mixture, then nuts. Pour into 9-cup mold and chill until firm.
