Pecan Pumpkin Loaf - cooking recipe

Ingredients
    1/3 c. shortening
    1 1/3 c. sugar
    1 c. canned or cooked pumpkin
    2 eggs
    1/2 tsp. vanilla extract
    1 2/3 c. flour
    1 tsp. baking soda
    3/4 tsp. salt
    1/4 tsp. baking powder
    1/2 tsp. ground cinnamon
    1/2 tsp. ground nutmeg
    1/3 c. water
    1 c. chopped pecans or walnuts
Preparation
    In a mixing bowl, cream shortening and sugar.
    Add pumpkin; beat well.
    Add the eggs, one at a time, beating well after each addition.
    Beat in vanilla.
    Combine the dry ingredients; add to pumpkin mixture alternately with water.
    Stir in nuts.
    Pour into a greased 9 x 5 x 3-inch loaf pan.
    Bake at 350\u00b0 for 55 to 65 minutes or until a toothpick comes out clean.
    Cool for 10 minutes before removing from pan to a wire rack.
    Yield: 1 loaf.
