Braised Rabbit - cooking recipe

Ingredients
    1 rabbit, dressed
    baking soda
    flour
    salt and pepper
    cooking oil
    2 carrots, chopped
Preparation
    Cut rabbit into serving size pieces.
    Soak overnight in water to which has been added about a tablespoon of baking soda. Remove, wipe dry and shake in a bag with a mixture of flour, salt and pepper.
    Brown the meat in hot oil.
    Place on a rack in a roasting pan.
    Sprinkle with carrots, add 1 cup water and bake at 300\u00b0 until tender.
