Amaretti - cooking recipe

Ingredients
    4 c. slivered almonds
    2 c. granulated sugar
    4 large egg whites
    1 tsp. almond extract
    confectioners sugar
Preparation
    Lightly grease 3 cookie sheets.
    Process almonds and sugar in food processor or blender, until finely ground.
    Beat egg whites in a large bowl with electric mixer until stiff peaks form.
    Beat in extract.
    Gently stir in almond mixture.
    Result will be a thick, sticky paste.
    Drop rounded teaspoonfuls 1 1/2
    inches apart on prepared cookie sheets.
    Dust top with confectioners sugar stirred through a sieve.
    Let stand 2 hours at room temperature, so cookies retain shape and tops dry.
